Couscous with Chicken

Servings: 8 servings

Description: Chicken and vegetables simmered in spices, served with steamed couscous and raisins.

Ingredients:

  • 2 T olive or vegetable oil
  • 2.5 to 3 lb broiler-fryer whole chicken, cut up
  • 4 small carrots, 2-inch pieces
  • 2 med onions, sliced
  • 2 med turnips, quartered
  • 2 cloves garlic, chopped
  • 2 t ground coriander
  • 1.5 t salt
  • 1 t chicken bouillon
  • 1/4 t ground red pepper
  • 1/4 t ground turmeric
  • 1 C water
  • 3 zucchini, sliced
  • 1 can (15 oz) garbanzo beans, drained
  • 1 1/3 C couscous
  • 3/4 C raisins
  • 1/2 t salt
  • 1 C boiling water
  • 1/2 C margarine or butter
  • 1/2 t ground turmeric

Instructions:

  1. Brown chicken in oil. Drain fat. Add vegetables, garlic, spices, and water. Simmer 30 minutes.
  2. Add zucchini and cook until tender. Stir in beans and heat 5 minutes.
  3. Mix couscous, raisins, and salt. Add boiling water. Let absorb, then sauté with butter and turmeric.
  4. Serve couscous mounded on platter with chicken and vegetables around.
