Napa Valley Chicken Wings with Wine Dressing

Description: Messy but utterly delicious chicken wing appetizers served at a winery party.

Ingredients:

  • 8 chicken wings
  • 1/4 C cornstarch
  • 2 t salt
  • 1/2 t white pepper
  • Oil for frying
  • 1 C olive oil
  • 1 C tarragon wine vinegar
  • 3/4 C dry white wine
  • 1 clove garlic, mashed
  • 1/2 t dry mustard
  • 1/2 t sugar
  • 1/2 t dried basil, crushed
  • 1/2 t dried oregano, crushed
  • 1/2 t dried tarragon, crushed
  • Salt, pepper to taste
  • 1 small tomato, peeled and sliced
  • 1/2 medium green bell pepper, sliced
  • 1/2 small onion, sliced in rings

Instructions:

  1. Disjoint wings, discard tips, remove smaller bone in two-bone section, flatten.
  2. Dredge chicken in cornstarch mixed with salt and pepper. Let dry 30 minutes.
  3. Fry chicken in 1/2 inch oil until golden brown and tender, about 7 minutes each side.
  4. Drain. Combine oil, vinegar, wine, garlic, mustard, sugar, herbs, salt, pepper for dressing.
  5. Combine tomato, bell pepper, onion with dressing.
  6. To serve, bring chicken to room temperature and arrange over vegetables.
