BBQ Butt Pickle Sliders
These BBQ Butt Pickle Sliders are one of the best ways to put your famously tender RizzieFarms smoked butt to work—whether you’re using leftovers from a weekend cookout or smoking a fresh roast just for the occasion. Juicy pulled pork is layered onto soft Hawaiian rolls with tangy BBQ sauce, creamy slices of fresh mozzarella, and crisp dill pickle chips for the perfect pop of acidity. Brushed with a garlicky, buttery parmesan glaze and baked until warm and melty, these sliders are an effortless crowd-pleaser ideal for game day, parties, tailgates, or an easy weeknight main event. They slice beautifully, stay warm for serving, and disappear fast!
Ingredients
Sliders
- 1 (12-pack) dinner rolls or Hawaiian sweet rolls
- 3 cups BBQ Butt, shredded (RizzieFarms smoked butt)
- 1/2 cup BBQ sauce
- 8 ounces fresh mozzarella, sliced
- 24 dill pickle chips
Buttery Garlic Topping
- 1/2 cup melted butter
- 2 tablespoons garlic, finely minced
- 2 tablespoons grated Parmesan cheese
Instructions
-
Prepare the oven
Preheat the oven to 350°F.
-
Assemble the base layer
Slice the 12-pack of dinner rolls horizontally as one sheet. Place the bottom half of the rolls onto a 9×13 baking tray.
-
Layer the BBQ Butt, sauce, cheese, and pickles
Spread the 3 cups shredded BBQ Butt evenly across the bottom rolls. Spoon or brush the 1/2 cup BBQ sauce evenly over the meat. Arrange the sliced 8 ounces fresh mozzarella on top, followed by the 24 dill pickle chips distributed evenly across the surface.
-
Add the top buns
Place the top half of the rolls back onto the assembled sliders.
-
Make and apply the buttery garlic topping
In a small bowl, stir together the 1/2 cup melted butter, 2 tablespoons finely minced garlic, and 2 tablespoons grated Parmesan cheese. Brush the mixture generously over the tops of the rolls.
-
Bake
Bake the sliders at 350°F for 20 minutes, or until the cheese is melted and the tops are lightly golden.
-
Slice and serve
Remove from the oven, let rest 2 minutes for easier slicing, then cut into 12 individual sliders. Serve warm.
Notes
- These sliders can be assembled ahead of time and refrigerated; add 5–7 minutes to the baking time if baking from cold.
- They stay warm well and make excellent party food.
- Leftover sliders reheat well wrapped in foil.
