Made with a lean dough of bread flour, water, olive oil, and minimal sugar, they bake at high heat with steam to create that bakery-style exterior. Ingredients

Lean Dough
  • 3 1/2 cups bread flour
  • 1 1/4 cups warm water (110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 teaspoon sugar
  • 1 1/2 teaspoons salt
  • 1 tablespoon olive oil

Instructions

  1. Activate yeast Combine warm water, sugar, and yeast in a bowl. Let sit 5–10 minutes until foamy.
    Foaming indicates active yeast.
  2. Mix and knead Add bread flour, salt, and olive oil. Mix until combined, then knead 8–10 minutes until smooth and slightly tacky.
    Dough should feel softer than traditional sandwich dough but not sticky.
  3. First rise Place dough in a lightly oiled bowl, cover, and let rise 60–90 minutes until doubled.
  4. Shape buns Divide dough into 8 equal portions. Shape into tight balls and place on a parchment-lined sheet pan. Flatten slightly.
    For rustic style, lightly dust tops with flour and score a shallow X.
  5. Second rise Cover loosely and let rise 30–40 minutes until puffy but still firm.
  6. Bake with steam Preheat oven to 425°F with a metal pan on the bottom rack. Place buns in oven and carefully pour 1 cup hot water into the hot metal pan to create steam. Close the door immediately and bake 18–20 minutes until deep golden brown and internal temperature reaches about 200°F.
    Steam creates the crisp crust. Do not open the oven during the first 15 minutes.
  7. Cool uncovered Transfer buns to a cooling rack and allow to cool completely uncovered to preserve crust texture.
    Covering while warm will soften the crust.

  • Higher baking temperature creates stronger oven spring and better crust.
  • For extra crispness, mist oven walls lightly before closing door (avoid oven light).
  • These buns are best same day for peak crust texture.
