  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg
  • 1/8 teaspoon ground cardamom (optional)
  • 1 tablespoon all-purpose flour
  • 1 tablespoon coarse sanding sugar (optional, for topping)
  • 1 egg
  • 1 tablespoon water

Rustic Pear Puff Pastry Tart

Instructions

  1. Preheat the oven to 400°F (205°C). Line a baking sheet or pizza stone with parchment paper.
  2. Unfold the thawed puff pastry onto the parchment. Lightly score a 1-inch border around the edges without cutting completely through the dough.
  3. Whisk together the brown sugar, granulated sugar, cinnamon, nutmeg, cardamom, and flour.
  4. Arrange the pear slices inside the scored border, overlapping them slightly for an attractive pattern.
  5. Brush the pears with melted butter mixed with the vanilla extract.
  6. Sprinkle the sugar-spice mixture evenly over the pears.
  7. Whisk the egg with the water to make an egg wash. Brush only the pastry border. Sprinkle the border with sanding sugar if using.
  8. Bake for 28–32 minutes, until the pastry is deep golden brown and the pears are tender with lightly caramelized edges.
  9. Allow the tart to cool for 10 minutes before serving.
  10. Dust lightly with powdered sugar and serve warm with vanilla ice cream, whipped cream, caramel sauce, or toasted pecans.

Notes

  • Bartlett, Bosc, or Anjou pears all work beautifully.
  • Very ripe pears may release more juice; the tablespoon of flour helps thicken the juices during baking.
  • For extra flavor, spread a thin layer of cream cheese, mascarpone, almond paste, or frangipane beneath the pears before arranging the fruit.
  • A drizzle of local honey after baking makes an excellent finishing touch.
  • Leftovers are best reheated in a 350°F oven for 5–8 minutes to restore the crisp pastry.
