Costco Rotisserie Chicken Quesadillas
A quick and satisfying meal built around Costco rotisserie chicken, melted cheese, and crispy flour tortillas. These quesadillas come together in minutes and can be customized with onions, peppers, jalapeños, salsa, and garden-fresh vegetables. Perfect for weeknight dinners, lunches, or using up leftover chicken.

Quesadilla Filling
- 2 cups shredded Costco rotisserie chicken
- 2 cups shredded Monterey Jack, cheddar, or Mexican blend cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 jalapeño, finely diced (optional)
- 2 tablespoons salsa
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- Juice of 1/2 lime
Tortillas
- 8 medium flour tortillas
- 1 tablespoon butter or olive oil
Serving Suggestions
- Sour cream
- Guacamole
- Salsa or pico de gallo
- Fresh cilantro, chopped
- Lime wedges
Instructions

In a mixing bowl, combine 2 cups shredded rotisserie chicken, 2 tablespoons salsa, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, and the juice of 1/2 lime. Stir until evenly coated.

Heat a large skillet or griddle over medium heat.

Lightly brush one side of a flour tortilla with butter or olive oil. Place it butter-side down in the skillet.

Sprinkle about 1/4 cup shredded cheese over one half of the tortilla. Add approximately 1/4 cup seasoned chicken, a spoonful of diced onion, bell pepper, and jalapeño if using. Top with another 1/4 cup cheese.

Fold the tortilla in half over the filling. Cook for 2–3 minutes until the bottom is golden brown and crisp.

Carefully flip and cook the second side for 2–3 minutes until golden brown and the cheese is fully melted.

Transfer to a cutting board and rest for 1 minute. Cut into wedges.

Repeat with the remaining tortillas, chicken mixture, vegetables, and cheese.

Serve warm with sour cream, guacamole, salsa, chopped cilantro, and lime wedges.

- Costco's rotisserie chicken provides enough meat for multiple batches or additional meals.
- For extra-crispy quesadillas, use freshly cooked uncooked tortillas such as Tortilla Land tortillas.
- Garden vegetables such as zucchini, sweet onions, and fresh jalapeños work especially well in this recipe.
