Ingredients

Ribs
  • 2 medium onions, cut into sixths
  • 3 pounds country style pork ribs (bone-in or boneless)
  • 1/2 cup rib spice rub
  • 1 cup barbecue sauce
  • 1 (12 oz) can beer
  • Cooking spray (for slow cooker)

Instructions

  1. Prepare the slow cooker Lightly spray the inside of the slow cooker with **cooking spray**.
  2. Add onions Peel and cut **2 medium onions** into sixths. Place all onion pieces evenly across the bottom of the slow cooker.
  3. Add beer Pour **1 (12 oz) can of beer** into the bottom of the slow cooker over the onions.
  4. Season the ribs Coat **3 pounds of country style pork ribs** thoroughly with **1/2 cup rib spice rub**, pressing to adhere.
  5. Load the slow cooker Place the seasoned ribs on top of the onions. Pour **1 cup barbecue sauce** evenly over the ribs.
  6. Cook Cover the slow cooker with the lid. Cook on **LOW for 6–8 hours** or **HIGH for 3–4 hours**, or until the ribs are fork-tender.
  7. Serve Carefully remove the ribs and onion pieces to a serving platter. Serve hot with additional barbecue sauce for dipping.

Notes

  • Bone-in ribs add richer flavor, but boneless ribs work great as well.
  • For a thicker sauce, remove the ribs and simmer the liquid on the stovetop to reduce.
  • Try different beer styles — lagers for mild flavor, or darker beers for deeper richness.
