Smoked Chicken Salad

Tender cubes of smoked chicken breast are folded together with crisp celery, onion, and apple, then bound with creamy mayonnaise and gently perfumed with rosemary and tarragon. The subtle sweetness of the apple plays against the deep smoke of the chicken, making this salad perfect piled onto toasted rolls, served with fresh tomato slices, or spooned over greens for a light but satisfying meal.
Ingredients
Smoked Chicken Salad
- 4 cups cubed smoked chicken breast
- 2 stalks celery, chopped fine
- 1/2 onion, chopped fine
- 1 peeled crisp apple, chopped fine
- 1 cup mayonnaise
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried tarragon
- Salt, to taste
- Black pepper, to taste
Instructions

In a large mixing bowl, combine **4 cups cubed smoked chicken breast**, **2 finely chopped celery stalks**, **1/2 finely chopped onion**, and **1 peeled, finely chopped crisp apple**.

Add **1 cup mayonnaise**, **1/4 teaspoon dried rosemary**, **1/4 teaspoon dried tarragon**, **salt to taste**, and **black pepper to taste** to the bowl with the smoked chicken and vegetables.

Stir all ingredients together until the **4 cups smoked chicken**, **celery**, **onion**, **apple**, and **1 cup mayonnaise** mixture is evenly coated and the seasonings are well distributed.

Cover the bowl and refrigerate the smoked chicken salad for at least **1 hour** to allow the flavors from the **rosemary**, **tarragon**, and smoked chicken to meld.
