Ingredients

Fresh Fig Jam
  • 2 pounds fresh figs, stems removed and chopped
  • 1 cup granulated sugar
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • Zest of one lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the figs Wash 2 pounds fresh figs thoroughly, remove stems, and chop into small pieces.
  2. Combine ingredients In a large saucepan, combine the chopped figs with 1 cup granulated sugar, 1/4 cup honey, 1/4 cup lemon juice, and the zest of one lemon. Stir to mix.
  3. Cook and reduce Bring the mixture to a boil over medium-high heat, stirring frequently. Once boiling, reduce heat to low and simmer 45–60 minutes, stirring occasionally, until the jam thickens.
  4. Purée Use an immersion blender to purée the jam to your desired smoothness while still in the saucepan.
  5. Finish with vanilla Stir in 1 teaspoon vanilla extract and cook 5 minutes longer to infuse the flavor.
  6. Jar the jam Remove from heat and ladle the hot jam into sterilized jars, leaving 1/4 inch headspace. Wipe rims clean and apply sterilized lids and rings.
  7. Water bath canning Place jars into a boiling water bath canner ensuring 1–2 inches of water above the tops. Cover and process for 10 minutes. Adjust time for altitude if necessary.
  8. Cool and store Let jars cool at room temperature. Listen for the lids to pop, confirming a seal. Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening for up to 3 months.

Notes

  • For a chunkier jam, blend only half of the mixture.
  • If figs are very sweet, reduce sugar slightly.
  • For deeper flavor, add a cinnamon stick to the simmering stage (remove before blending).
