Fresh Fig Jam
Garden Fresh Fig Jam is one of the purest expressions of summer at RizzieFarms — a luscious, jewel-toned preserve made from plump ripe figs picked straight from the garden. Slowly simmered with sugar, honey, lemon, and a touch of vanilla, the figs break down into a velvety, fragrant spread that balances natural sweetness with bright citrus. Perfect on toast, served with cheeses, spooned over pancakes, or used as a glaze for meats, this jam is a celebration of fresh homegrown fruit transformed into a timeless preserve.
Ingredients
Fresh Fig Jam
- 2 pounds fresh figs, stems removed and chopped
- 1 cup granulated sugar
- 1/4 cup honey
- 1/4 cup lemon juice
- Zest of one lemon
- 1 teaspoon vanilla extract
Instructions
-
Prepare the figs
Wash 2 pounds fresh figs thoroughly, remove stems, and chop into small pieces.
-
Combine ingredients
In a large saucepan, combine the chopped figs with 1 cup granulated sugar, 1/4 cup honey, 1/4 cup lemon juice, and the zest of one lemon. Stir to mix.
-
Cook and reduce
Bring the mixture to a boil over medium-high heat, stirring frequently. Once boiling, reduce heat to low and simmer 45–60 minutes, stirring occasionally, until the jam thickens.
-
Purée
Use an immersion blender to purée the jam to your desired smoothness while still in the saucepan.
-
Finish with vanilla
Stir in 1 teaspoon vanilla extract and cook 5 minutes longer to infuse the flavor.
-
Jar the jam
Remove from heat and ladle the hot jam into sterilized jars, leaving 1/4 inch headspace. Wipe rims clean and apply sterilized lids and rings.
-
Water bath canning
Place jars into a boiling water bath canner ensuring 1–2 inches of water above the tops. Cover and process for 10 minutes. Adjust time for altitude if necessary.
-
Cool and store
Let jars cool at room temperature. Listen for the lids to pop, confirming a seal. Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening for up to 3 months.
Notes
- For a chunkier jam, blend only half of the mixture.
- If figs are very sweet, reduce sugar slightly.
- For deeper flavor, add a cinnamon stick to the simmering stage (remove before blending).
