Ingredients
Kiwi Dressing Base
- 2 ripe kiwis, peeled and chopped
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or white wine vinegar)
- 1 teaspoon honey or maple syrup
- 1 teaspoon Dijon mustard (optional)
- 1 pinch salt
- Freshly ground black pepper, to taste
- Optional: squeeze of lime or lemon juice

Add ingredients to blender
Place 2 chopped ripe kiwis, 2 tablespoons olive oil, 1 tablespoon apple cider vinegar, 1 teaspoon honey, 1 teaspoon Dijon mustard (optional), a pinch of salt, and freshly ground black pepper into a blender or food processor.

Blend until smooth
Blend all ingredients on high speed until completely smooth, adjusting texture with a small splash of water if needed.

Adjust flavor
Taste the dressing and adjust seasoning: add more honey for sweetness, vinegar for acidity, or a squeeze of lime or lemon juice for extra brightness.

Notes
