Ingredients

Kiwi Dressing Base
  • 2 ripe kiwis, peeled and chopped
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or white wine vinegar)
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard (optional)
  • 1 pinch salt
  • Freshly ground black pepper, to taste
  • Optional: squeeze of lime or lemon juice

Instructions

  1. Add ingredients to blender Place 2 chopped ripe kiwis, 2 tablespoons olive oil, 1 tablespoon apple cider vinegar, 1 teaspoon honey, 1 teaspoon Dijon mustard (optional), a pinch of salt, and freshly ground black pepper into a blender or food processor.
  2. Blend until smooth Blend all ingredients on high speed until completely smooth, adjusting texture with a small splash of water if needed.
  3. Adjust flavor Taste the dressing and adjust seasoning: add more honey for sweetness, vinegar for acidity, or a squeeze of lime or lemon juice for extra brightness.
  4. Chill before serving Transfer the dressing to a sealed container and refrigerate for 15–30 minutes to allow the flavors to meld.

Notes

  • For a tropical twist, add 1 tablespoon orange juice or a small handful of chopped fresh mint.
  • Delicious over spinach salads with berries or nuts.
