Garam Masala - RizzieFarms Blend

A balanced, aromatic Indian garam masala made from freshly toasted whole spices. Warm, slightly sweet, and deeply fragrant with notes of cinnamon, cardamom, and clove, designed to finish curries and elevate chicken, vegetables, and lentil dishes.

Ingredients

Whole Spices
  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon black peppercorns
  • 8 green cardamom pods
  • 2 black cardamom pods (optional)
  • 1 tablespoon cloves
  • 1 cinnamon stick (about 3 inches), broken
  • 2 bay leaves
Finish (After Grinding)
  • 1/2 teaspoon freshly grated nutmeg (or ground nutmeg)

Instructions

  1. Heat a dry skillet over medium-low heat. Add all whole spices except nutmeg.
  2. Toast spices for 2–4 minutes, stirring frequently, until fragrant and lightly darkened. Do not burn.
  3. Transfer spices to a plate and allow to cool completely.
  4. Grind the cooled spices into a fine powder using a spice grinder or mortar and pestle.
  5. Stir in the nutmeg after grinding and mix well.
  6. Store in an airtight container in a cool, dark place.

Notes

  • Fresh grinding makes a major difference in aroma and flavor compared to pre-ground blends.
  • Best used within 2–3 months for peak flavor.
  • Add toward the end of cooking (1–2 teaspoons per dish) to preserve aroma.
  • For a slightly sweeter profile, add 1 teaspoon fennel seeds when toasting.
