Ingredients

Turmeric Rice
  • 2 cups basmati rice
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 garlic cloves, sliced
  • 1 tablespoon fresh minced ginger
  • 3–4 teaspoons turmeric powder (or 3–4 tablespoons fresh minced turmeric)
  • 2 tablespoons butter
  • 2 teaspoons salt
  • Black pepper, to taste
  • 1.5 cups chicken broth (or water)
  • 1/8 teaspoon cumin or 1/2 teaspoon coriander
  • Fresh cilantro, for garnish (optional)
  • Fresh lime wedges, for serving (optional)

Instructions

  1. Rinse the rice Rinse **2 cups basmati rice** in a colander under cold water several times until the water runs clear and no longer appears milky. Drain well.
  2. Add ingredients to rice cooker Add the rinsed rice to the rice cooker. Pour in **1.5 cups chicken broth (or water)**. Add **1 diced onion**, **1 diced green bell pepper**, **2 sliced garlic cloves**, **1 tablespoon minced ginger**, **3–4 teaspoons turmeric (or 3–4 tablespoons fresh minced turmeric)**, **2 teaspoons salt**, **black pepper to taste**, and **1/8 teaspoon cumin (or 1/2 teaspoon coriander)**. Stir gently to combine.
  3. Add butter Place **2 tablespoons butter** on top of the rice mixture. Do not stir.
  4. Cook Close the lid and cook according to your rice cooker’s standard white-rice setting until the cooker switches to warm.
  5. Fluff and serve Fluff the rice with a fork to distribute the butter and aromatics evenly. Garnish with **fresh cilantro** and serve with **fresh lime wedges**, if desired.

  • For deeper flavor, sauté the onions, peppers, garlic, and ginger in a little oil before adding to the rice cooker.
