Cajun Rosemary Roasted Potatoes
Crispy, golden potato cubes roasted with olive oil, garlic, bell peppers, onion, thyme, fresh rosemary, and a kick of Cajun-style heat. These aromatic potatoes bake up with crackling edges and tender centers, making a perfect side for roasted chicken, grilled pork chops, or a juicy steak.
Ingredients
Potatoes and Seasoning
- 6 large white-skinned potatoes
- 2 tablespoons olive oil
- 3 cloves garlic, finely minced
- 1/2 green bell pepper, finely minced
- 1/2 red bell pepper, finely minced
- 1 small onion, minced
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme, chopped
- 1/2 teaspoon coarsely ground black pepper
- 1 sprig fresh rosemary, chopped
- Cayenne pepper or chile powder, to taste
- Salt, to taste
Instructions
-
Preheat the oven to 400°F. Prepare a shallow roasting pan or rimmed baking sheet so the 6 large white-skinned potatoes can roast in a single layer.
-
Scrub and peel the 6 large white-skinned potatoes if desired, then cut the potatoes into 1-inch cubes.
-
Place the potato cubes in a large bowl and add 2 tablespoons olive oil, 3 finely minced garlic cloves, 1/2 finely minced green bell pepper, 1/2 finely minced red bell pepper, 1 small minced onion, 1 teaspoon dried thyme or 1 tablespoon fresh thyme, 1/2 teaspoon coarsely ground black pepper, 1 chopped sprig fresh rosemary, cayenne pepper or chile powder to taste, and salt to taste.
-
Toss the potato cubes thoroughly with the olive oil, garlic, peppers, onion, thyme, black pepper, rosemary, cayenne or chile powder, and salt until all the potatoes are evenly coated.
-
Spread the seasoned potato mixture in a single layer in a shallow roasting pan or on a rimmed baking sheet. Avoid using a deep pan so the potato chunks will brown well.
-
Bake the potatoes at 400°F for about 1 hour, turning the potatoes every 15 minutes so they brown evenly on all sides and become crisp on the edges and tender inside.
-
Taste and adjust seasoning with additional salt, black pepper, or cayenne pepper if desired, then serve the Cajun rosemary roasted potatoes hot.
Notes
- A shallow pan or baking sheet helps the potatoes brown and crisp instead of steaming.
- Adjust the cayenne or chile powder to taste, depending on how spicy you like your potatoes.
- These potatoes pair especially well with roasted chicken, grilled pork chops, or steak.
- For extra crisp edges, you can broil the potatoes for 1–2 minutes at the end, watching closely to avoid burning.
