Cajun Rosemary Roasted Potatoes

  • 6 large white-skinned potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 1/2 green bell pepper, finely minced
  • 1/2 red bell pepper, finely minced
  • 1 small onion, minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme, chopped
  • 1/2 teaspoon coarsely ground black pepper
  • 1 sprig fresh rosemary, chopped
  • Cayenne pepper or chile powder, to taste
  • Salt, to taste

Instructions

  1. Preheat the oven to 400°F. Prepare a shallow roasting pan or rimmed baking sheet so the 6 large white-skinned potatoes can roast in a single layer.
  2. Scrub and peel the 6 large white-skinned potatoes if desired, then cut the potatoes into 1-inch cubes.
  3. Place the potato cubes in a large bowl and add 2 tablespoons olive oil, 3 finely minced garlic cloves, 1/2 finely minced green bell pepper, 1/2 finely minced red bell pepper, 1 small minced onion, 1 teaspoon dried thyme or 1 tablespoon fresh thyme, 1/2 teaspoon coarsely ground black pepper, 1 chopped sprig fresh rosemary, cayenne pepper or chile powder to taste, and salt to taste.
  4. Toss the potato cubes thoroughly with the olive oil, garlic, peppers, onion, thyme, black pepper, rosemary, cayenne or chile powder, and salt until all the potatoes are evenly coated.
  5. Spread the seasoned potato mixture in a single layer in a shallow roasting pan or on a rimmed baking sheet. Avoid using a deep pan so the potato chunks will brown well.
  6. Bake the potatoes at 400°F for about 1 hour, turning the potatoes every 15 minutes so they brown evenly on all sides and become crisp on the edges and tender inside.
  7. Taste and adjust seasoning with additional salt, black pepper, or cayenne pepper if desired, then serve the Cajun rosemary roasted potatoes hot.
