Fresh Green Beans Almondine

A simple and elegant Southern take on a French classic. Crisp–tender fresh green beans are steamed until just al dente, then tossed with butter and topped with toasted almonds for a light, flavorful, low-carb side dish that pairs beautifully with chicken, seafood, pork, or holiday meals.

Ingredients

Green Beans
  • 2 pounds fresh green beans, washed and ends trimmed
  • 2 tablespoons butter, cut into small pieces
  • Salt and pepper, to taste
Toasted Almonds
  • 1/2 to 1 cup sliced or slivered almonds
  • Pinch of salt (for lining the baking sheet)

Instructions

  1. Wash 2 pounds of fresh green beans and trim the ends.
  2. Place the green beans into a microwave-safe dish. Sprinkle with salt and pepper to taste and dot with 2 tablespoons butter cut into small pieces.
  3. Cover the dish and microwave until the green beans are al dente, usually 8 to 10 minutes depending on microwave strength. Stir halfway if needed.
  4. To toast the almonds, preheat the oven to 325°F. Sprinkle a pinch of salt across the bottom of a baking pan (this helps prevent the almonds from sticking).
  5. Add 1/2 to 1 cup sliced or slivered almonds to the salted pan and toast in the oven for about 10 minutes, stirring occasionally, until light golden brown. Remove from oven immediately to prevent over-browning.
  6. At serving time, sprinkle the toasted almonds over the hot green beans and toss lightly if desired.

Notes

  • Green beans should remain bright green and crisp-tender; avoid overcooking.
  • Toasting the almonds brings out their natural nuttiness and adds texture.
  • For extra richness, drizzle an additional teaspoon of melted butter over the beans before adding almonds.
  • Pairs wonderfully with roasted chicken, salmon, pork tenderloin, or holiday entrées.
