Garlic Curry Roasted Potatoes
Golden, crispy roasted potatoes coated in a bold blend of garlic and curry powder. These bite-sized potatoes are tossed with olive oil, garlic, curry, and salt, then roasted until tender inside and crackling on the edges. - 2 pounds potatoes, washed and cut into bite-sized pieces
- 1/4 cup olive oil
- 1 1/2 tablespoons garlic powder
- 1 1/2 tablespoons curry powder
- 1 teaspoon salt, or to taste

Preheat the oven to 350°F and prepare a large baking tray or sheet pan so the 2 pounds potatoes can roast in a single layer.

Wash 2 pounds potatoes thoroughly and cut them into bite-sized pieces. Place all of the cut potatoes into a large mixing bowl.

Add 1/4 cup olive oil, 1 1/2 tablespoons garlic powder, 1 1/2 tablespoons curry powder, and 1 teaspoon salt (or to taste) to the bowl with the potatoes.

Toss the potatoes with the olive oil, garlic powder, curry powder, and salt until every potato piece is evenly coated with the spice mixture.

Pour the seasoned potatoes onto the large baking tray or sheet pan, spreading them out into a single layer so the 2 pounds potatoes roast evenly and do not overlap.

Place the baking tray in the preheated 350°F oven and bake for 30 to 35 minutes, pulling the tray out halfway through to toss the potatoes and ensure even browning on all sides.

Check that the garlic curry roasted potatoes are tender when pierced with a fork and crisped to your liking on the edges. Taste and adjust with a pinch more salt if needed, then serve hot.
Notes
- Cut the potatoes into evenly sized pieces so they roast at the same rate.
- For extra crispiness, you can increase the oven temperature to 375°F for the last 5 minutes, watching closely to prevent overbrowning.
- Any waxy or all-purpose potatoes work well in this recipe; Yukon Golds give a creamy interior with crisp edges.
