Blue Cornmeal Chicken Wings

Servings: Makes 20 appetizers

Description: Blue corn provides a distinctive color and earthy flavor to a variety of dishes.

Ingredients:

  • 1/4 C lime juice
  • 1/4 C oil
  • 1/2 t crushed red pepper
  • 10 chicken wings (about 2 lb)
  • 2 T margarine or butter
  • 1/2 C blue or yellow cornmeal
  • 2 T flour
  • 1/2 t salt
  • 1/2 t ground cumin
  • 1/8 t pepper

Instructions:

  1. Mix lime juice, oil and red pepper in large bowl.
  2. Cut each chicken wing at joints to make 3 pieces. Discard tip and excess skin.
  3. Place wings in oil mixture and stir to coat. Cover and refrigerate at least 3 hours.
  4. Drain. Heat oven to 425°F. Melt margarine in pan.
  5. Shake remaining ingredients in bag or mix in bowl.
  6. Coat wings in cornmeal mixture and place in pan.
  7. Bake, uncovered, 20 minutes. Turn. Bake 20–25 minutes longer until golden brown.
