Brandied Chicken (Pollo al Brandy)

Servings: Makes 6 servings

Description: Chicken with sliced mushrooms, cream, and a splash of brandy.

Ingredients:

• 1/4 C butter
• 3 to 3 1/2 lb broiler-fryer whole chicken, cut up
• 1 med onion, thinly sliced
• 1/2 t salt
• 1/2 t pepper
• 2 T chopped fresh parsley
• 1 C Italian brandy
• 2 C sliced fresh mushrooms
• 3/4 C whipping cream
• 1 T flour
• 1 egg yolk, slightly beaten

Instructions:

1. Heat butter and brown chicken and onion.
2. Add salt, pepper, parsley, and brandy. Cook 30 minutes covered.
3. Add mushrooms and cook 15 more minutes.
4. Mix cream, flour, and yolk in saucepan. Boil 1 minute stirring constantly.
5. Pour over chicken.
