Chicken in Mole Sauce

Servings: Makes 8 servings

Description: The best-known versions of mole are dark and highly spiced sauces for poultry and include unsweetened chocolate (here it is cocoa) as an ingredient.

Ingredients:

  • 1 dried chipotle chile
  • 1/4 C shortening or lard
  • 2 T ground red chiles
  • 3 C chicken broth
  • 4 flour tortillas, cut into pieces
  • 1/4 C tomato sauce
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 1 T raisins
  • 1 T chopped almonds or walnuts
  • 1 T sesame seeds
  • 1 T shelled pumpkin seeds
  • 1 T peanut butter
  • 1 1/2 t sugar
  • 1 1/2 t ground oregano
  • 1 1/2 t cocoa
  • 1/2 t anise seeds
  • 1/4 t each of cinnamon, cloves, nutmeg, allspice, ginger
  • 1/4 t ground cumin or 1/2 t cumin seeds
  • 8 boneless chicken breast halves

Instructions:

  1. Soften chile in warm water, drain and chop.
  2. Cook red chiles in shortening; add 2 cups broth and remaining ingredients except chicken.
  3. Simmer 30 minutes and blend until smooth.
  4. Simmer chicken in part of sauce and 1 cup broth until done.
  5. Combine cooking liquid with remaining sauce and pour over chicken.
