Chicken with Sauerkraut

Servings: Makes 6 servings

Description: Pungent caraway seed gives this German dish its unique flavor.

Ingredients:

  • 2 T oil
  • 6 large chicken breast halves (about 2 1/2 lb)
  • 1 can (16 oz) sliced potatoes, drained
  • 1 can (16 oz) sauerkraut, drained
  • 1/2 t caraway seeds
  • 1/4 t crushed red pepper
  • Sour cream

Instructions:

  1. Heat oil in 12-inch skillet until hot.
  2. Cook chicken over medium heat until brown on both sides, about 15 minutes.
  3. Drain fat.
  4. Add potatoes to skillet.
  5. Mix together sauerkraut, caraway seeds and red pepper and spoon over potatoes.
  6. Cover and cook over low heat until chicken is done, 35 to 40 minutes.
  7. Serve with sour cream.
