Chicken with Spicy Walnut Sauce (Satsivi)

Servings: Makes 6 servings

Description: Tart walnut sauce used is a traditional element of meat, fish or poultry dishes from the Georgian Republic.

Ingredients:

  • 6 large chicken breast halves (about 1/2 lb)
  • 2 T oil
  • 1 large onion, chopped
  • 3/4 C finely chopped walnuts
  • 3/4 C unsweetened pomegranate juice
  • 1/4 C water
  • 1 t ground cinnamon
  • 1/2 t salt
  • 1/4 t ground coriander
  • 1/8 t ground allspice
  • 1/8 t pepper

Instructions:

  1. Remove bones and skin from chicken breast halves.
  2. Heat oil in 12-inch skillet until hot.
  3. Cook chicken over medium heat until brown on both sides, about 10 minutes.
  4. Remove chicken.
  5. Cook and stir onion in oil until tender.
  6. Stir in remaining ingredients.
  7. Add chicken.
  8. Heat to boiling.
  9. Reduce heat. Cover and simmer until chicken is done, about 10 minutes.
  10. Remove chicken to warm platter and keep warm.
  11. Heat walnut mixture to boiling. Reduce heat.
  12. Simmer uncovered, stirring occasionally, until thickened, about 5 minutes.
  13. Spoon sauce over chicken.
