Crock Pot Chicken and Dumplings

Servings: Serves 6–8

Description: A cozy classic, this slow‑cooker version transforms tender chicken stewed in savory broth into a comforting meal crowned with fluffy dumplings—perfect for chilly evenings or family dinner nights.

Ingredients:

  • 4 chicken breasts or thighs
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery ribs, chopped
  • 4 cups chicken broth
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp dried thyme
  • 1 can refrigerated biscuit dough

Instructions:

  1. Place chicken, vegetables, broth, and seasonings in Crock Pot.
  2. Cover and cook on LOW for 6–7 hours, or HIGH for 3–4 hours.
  3. Shred chicken with forks and stir gently.
  4. Cut biscuits into quarters and drop into cooker.
  5. Cook on HIGH for 30 more minutes until dumplings are puffed and cooked.
  6. Stir gently before serving.
