Five-Spice Chicken (Wu Hsiang Chi)

Servings: Makes 6 to 8 servings

Description: Baked chicken marinated in Chinese five-spice and soy sauce.

Ingredients:

  • 2 1/2 to 3 lb broiler-fryer whole chicken, cut up
  • 1/3 C soy sauce
  • 2 T oil
  • 1 small onion, chopped
  • 1 clove garlic, finely chopped
  • 1/2 t ground ginger
  • 1/4 t ground cinnamon
  • 1/4 t crushed anise seed
  • 1/8 t ground nutmeg
  • 1/8 t ground cloves

Instructions:

  1. Marinate chicken in soy sauce, oil, onion, garlic, and spices for at least 1 hour.
  2. Place chicken in baking dish, brush with marinade.
  3. Bake at 350°F for about 1 hour, basting occasionally.
