Lemon Chicken

Servings: Makes 6 servings

Description: Battered and fried chicken in a tangy lemon sauce, a popular Chinese-style dish.

Ingredients:

  • 2 chicken breasts (about 2 lb)
  • 1 egg
  • 3 T plus 2 t cornstarch
  • 1 1/4 t salt
  • 1/4 t white pepper
  • 1 t chopped ginger root
  • 1/4 C plus 1 t water
  • 3 T oil plus oil for frying
  • 1/4 C flour
  • 1/4 t baking soda
  • 1/3 C chicken broth
  • 1/4 C sugar
  • 3 T lemon juice
  • 2 T light corn syrup
  • 2 T vinegar
  • 1 t dark soy sauce
  • 1 t chopped garlic
  • 1/2 lemon, thinly sliced

Instructions:

  1. Cut chicken into pieces. Mix egg, cornstarch, salt, pepper, ginger. Marinate chicken 30 minutes.
  2. Make batter with marinade, flour, water, cornstarch, oil, baking soda, salt.
  3. Dip chicken in batter. Fry until golden brown, drain, and slice.
  4. Boil sauce ingredients. Stir in cornstarch mix. Simmer to thicken.
  5. Pour sauce over chicken. Garnish with lemon slices.
