Lemon Herb Roasted Chicken Legs

Description: Simple, fresh, and incredibly flavorful, these lemon herb roasted chicken legs are a bright alternative to heavier dishes. A marinade of fresh lemon juice, rosemary, thyme, and garlic gives the chicken a sunny Mediterranean flair. As it roasts, the skin crisps up beautifully, while the citrus and herbs keep the meat tender and fragrant. It’s elegant enough for dinner guests, yet easy enough for weeknights.

Ingredients:

  • 8 chicken legs
  • 2 T olive oil
  • 2 T lemon juice
  • 1 t lemon zest
  • 1 T chopped fresh rosemary
  • 1 T chopped fresh thyme
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F.
  2. Mix olive oil, lemon juice, zest, herbs, garlic, salt, and pepper.
  3. Rub mixture onto chicken legs. Marinate 30 minutes or longer.
  4. Place on a baking sheet and roast for 40–45 minutes until skin is golden and crisp.
  5. Serve garnished with lemon slices and extra herbs.
