Michele's Minestrone Soup

Description: While sitting in the work space cube, Michele, my sell mate and PC companion, came in with some warmed up Minestrone Soup for her lunch. It smelled heavenly! Michele had reviewed Chicken! I suggested to include her recipe in the book. Here it is!

Ingredients:

• 3 chicken bouillon cubes
• 3 C water
• 2 C cubed cooked chicken (optional)
• 3 C Campbell's Tomato Juice
• 1/2 t oregano
• 1/2 t basil
• 1/4 t marjoram
• 1 clove garlic, minced
• 4 carrots, sliced
• 2 zucchini, sliced
• 1 large potato, diced
• 1/2 onion, chopped
• 1 can kidney beans, drained
• 2 oz macaroni shells or elbows
• Grated cheese

Instructions:

1. Grated Parmesan or Mozzarella or Monterey Jack Cheese
2. Cook above 30-40 minutes. Sprinkle with Grated Parmesan or Mozzarella or Monterey Jack Cheese.
3. Serve with Crackers or Garlic Bread.
