Moghlai Chicken

Servings: Makes 4 to 8 servings

Description: Rich curry with onions, spices, and a saffron-scented sour cream sauce.

Ingredients:

  • 4 chicken breasts, split and boned
  • Seasoned flour
  • 1/4 C butter or margarine
  • 2 to 3 large onions, chopped
  • 6 large cloves garlic, crushed
  • 1 (1/2-in.) piece gingerroot, ground
  • 1 1/4 t ground cumin
  • 1 1/4 t cumin seeds, crushed
  • 1 1/4 t caraway seeds
  • 1 1/4 t ground turmeric
  • 1 t red pepper
  • 1 or 2 green chiles, split
  • 1 or 2 large tomatoes, chopped
  • 1 1/4 t ground cloves
  • 1 1/4 t ground cardamom
  • 1/4 C brown sugar, packed
  • 1 t saffron threads
  • 2 T warm milk
  • 1 C sour cream

Instructions:

  1. Dredge and brown chicken in butter. Remove.
  2. Saute onions, garlic, ginger. Add spices and fry 2–3 minutes.
  3. Add chicken, tomatoes, water. Simmer 25 minutes.
  4. Remove chicken. Mix spices, saffron in milk, and sour cream.
  5. Pour over chicken. Keep warm until serving.
