Description: A Cantonese stir-fry of sliced chicken, mushrooms, and vegetables in a light, delicate sauce. A fresh, clean-tasting dish ideal for healthy eating.

Ingredients:

  • 1 lb chicken breast, sliced
  • 1 cup sliced mushrooms
  • 1/2 cup snow peas
  • 1/2 cup sliced carrots
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 1/4 cup chicken broth
  • 1 tbsp vegetable oil

Instructions:

  1. Stir-fry chicken in oil until no longer pink.
  2. Add vegetables and cook until tender-crisp.
  3. Mix sauces, broth, and cornstarch, then pour into pan.
  4. Simmer until sauce thickens slightly.
  5. Serve with rice.
