Noodles with Stir-Fried Chicken and Vegetables

Description: A colorful noodle stir-fry with bok choy, mushrooms, chicken, and savory sauce.

Ingredients:

  • 2 T plus 1/2 t cornstarch
  • 1 1/4 t salt
  • Dash white pepper
  • 6 dried black mushrooms
  • 4 oz Chinese pea pods
  • 6 large stalks bok choy
  • 3 T oyster sauce
  • 2 T cold water
  • 1/2 t sugar
  • 1/2 t sesame oil
  • 2 qt water
  • 6 oz fresh or dry egg noodles
  • 5 T vegetable oil
  • 2 t finely chopped garlic
  • 1 t finely chopped ginger root
  • 1/2 C sliced bamboo shoots
  • 1/2 C thinly sliced water chestnuts
  • 1 C Chinese Chicken Broth

Instructions:

  1. Soak and slice mushrooms. Marinate chicken in cornstarch, salt, pepper. Refrigerate 30 min.
  2. Prep pea pods, bok choy, and make sauce with cornstarch, oyster sauce, sugar, and sesame oil.
  3. Cook noodles, then brown in skillet with oil and set aside.
  4. Stir-fry chicken with garlic and ginger. Remove from wok.
  5. Stir-fry vegetables with broth and sauce. Add chicken and pea pods.
  6. Serve over fried noodles.
