Orange Honeyed Chicken

Servings: 6 servings

Description: Chicken breasts in a honey-orange sauce served over rice, garnished with fresh oranges.

Ingredients:

• 3 chicken breasts, split
• 2 T butter or margarine
• 1/2 C orange juice
• 2 T honey
• 2 T chopped onion
• 1/8 t black pepper
• Salt
• Hot cooked rice
• 2 T dry white wine or water
• 1 T flour
• 1 t grated orange peel
• 2 large oranges, sectioned
• 1 orange, sliced
• Parsley

Instructions:

1. Brown chicken in butter. Add orange juice, honey, onion, pepper and salt. Simmer 20 minutes.
2. Remove chicken and keep warm on rice.
3. Add wine/flour mixture to pan and cook until thickened. Add orange peel and sections.
4. Spoon sauce over chicken. Garnish with slices and parsley.
