Oriental Treasure Soup

Servings: Makes about 2 1/2 quarts soup

Description: A rich soup served hot with a variety of add-ins for guests.

Ingredients:

  • 2 chickens (2.5 to 3 lb each)
  • 2 medium onions, sliced
  • 4 ribs celery, chopped
  • 2 carrots, chunked
  • 4 sprigs parsley
  • 1 t salt
  • 1/4 t white pepper
  • 3 T soy sauce
  • 1 1/2 T dry sherry
  • 1 1/2 t ginger juice
  • 1 1/2 t sesame oil
  • Diced tofu
  • Cooked soft Chinese noodles
  • Sliced green onions
  • Sliced fresh mushrooms
  • Sliced water chestnuts
  • Julienned celery
  • Julienned red bell peppers
  • Cilantro leaves

Instructions:

  1. Place chickens and vegetables in pot with 2 quarts water. Boil, then simmer 1.5–2 hours.
  2. Remove chickens. Strain broth (about 7 cups). Return broth to pot.
  3. Add soy sauce, sherry, ginger juice, and sesame oil. Dice chicken and return to broth.
  4. Heat to simmer. Arrange add-ins in bowls around chafing dish.
  5. Serve broth and allow guests to add desired ingredients.
