Roast Chicken with Spiced Yogurt (Tandoori Murghi)

Servings: Makes 8 to 10 servings

Description: Indian-style tandoori roast chicken marinated in spiced yogurt.

Ingredients:

  • 3 to 4 lb broiler-fryer whole chicken
  • 1/4 C plus 1/2 t water
  • 1/4 t dry mustard
  • 1 C plain yogurt
  • 1/4 C lemon juice
  • 1 clove garlic, chopped
  • 1 1/2 t salt
  • 1/2 t ground cardamom
  • 1/4 t ground ginger
  • 1/4 t ground cumin
  • 1/4 t crushed red pepper
  • 1/4 t pepper

Instructions:

  1. Mix mustard with water. Add yogurt, lemon juice, garlic, salt, spices.
  2. Marinate chicken in mixture 12 to 24 hours.
  3. Place chicken on rack, reserving marinade. Roast at 375F for 1 3/4 to 2 1/4 hours.
  4. Spoon marinade over chicken during last 30 minutes.
  5. Add water to pan juices and heat to serve as sauce.
