Russian Chicken Pie (Kurnik)

Servings: Makes 8 servings

Description: Russian chicken pie with rice, eggs, and a creamy mushroom sauce under pastry.

Ingredients:

• Pastry: 1/4 C margarine, 1/4 C shortening, 1 1/3 C flour, 1/4 t salt, 3-4 T cold water
• Filling: 2 C water, 1 C rice, 2 t bouillon, 2 onions, 8 oz mushrooms, 2 T margarine
• 1 C half and half, 2 t cornstarch, 1 C chicken broth, 3 C cooked chicken
• 2 T parsley, 2 t lemon juice, 1 t salt, 1/2 t nutmeg, 1/8 t pepper
• 4 hard-cooked eggs, 1 T dill weed, 1 egg yolk, 1 T water

Instructions:

1. Prepare pastry and filling per instructions.
2. Layer rice, chicken mixture, and egg mixture in dish.
3. Cover with pastry and brush with yolk.
4. Bake at 400°F for 30 minutes.
