Scottish-Style Roast Chicken (Howtowdie)

Servings: Makes 6 servings

Description: Traditional Scottish roast chicken with oat stuffing.

Ingredients:

• Stuffing: 1 onion, 1/4 C margarine, 1 C oats, 1/2 t salt, 1/2 t coriander, 1/4 t pepper, 1/8 t nutmeg
• Chicken: 3 to 4 lb chicken, 6 onions halved, 1/4 C margarine

Instructions:

1. Make oat stuffing in skillet.
2. Stuff chicken and roast at 375°F with onions, basting occasionally, for 1 1/2 hours.
