Sesame Chicken with Fun See

Servings: Makes 6 servings

Description: A crunchy and flavorful Cantonese dish with sesame and puffed noodles.

Ingredients:

  • 2 chicken breasts (about 2 lb)
  • 1 egg
  • 2 T flour
  • 1/4 C plus 2 T cornstarch
  • 1/2 C plus 2 T water
  • 1 t salt
  • 3 t oil, plus oil for frying
  • 1/4 t baking soda
  • 1/4 t white pepper
  • 1 C sugar
  • 1 C Chinese Chicken Broth
  • 3/4 C vinegar
  • 2 t dark soy sauce
  • 2 t chili paste
  • 1 clove garlic, finely chopped
  • 2 oz cellophane noodles
  • 2 T toasted sesame seeds

Instructions:

  1. Cut chicken into strips. Mix batter ingredients. Stir in chicken and chill 20 minutes.
  2. Mix water and cornstarch. Make sauce: boil sugar, broth, vinegar, soy, chili paste, oil, garlic.
  3. Stir in cornstarch mix. Cook until thick. Keep warm.
  4. Fry noodles in oil until puffed. Drain.
  5. Fry chicken in batches at 350°F, then fry again at 375°F until golden.
  6. Place on platter, pour sauce, sprinkle sesame seeds, arrange noodles around chicken.
