Shredded Chicken with Bean Sprouts and Pea Pods

Description: A stir-fry of shredded chicken with crisp bean sprouts and Chinese pea pods.

Ingredients:

  • 2 chicken breasts (about 2 lb)
  • 3 t cornstarch
  • 1 t salt
  • 1/8 t white pepper
  • 4 oz Chinese pea pods
  • 1 lb bean sprouts
  • 1/4 C plus 2 T chicken broth
  • 1 T dark soy sauce
  • 1 t sugar
  • 3 T oil
  • 2 t finely chopped garlic
  • 1 t finely chopped ginger root

Instructions:

  1. Cut chicken into 2x1/2-inch strips. Toss with 1 t cornstarch, 1/2 t salt, and pepper. Refrigerate 30 minutes.
  2. Remove strings from pea pods. Blanch in boiling water briefly. Rinse in cold water and drain.
  3. Rinse bean sprouts in cold water and drain.
  4. Mix 2 T broth, soy sauce, 2 t cornstarch, and sugar.
  5. Stir-fry bean sprouts with 1/2 t salt in 1 T oil for 2 minutes. Remove and drain.
  6. Stir-fry chicken, garlic, and ginger in 2 T oil until chicken is white.
  7. Add bean sprouts and pea pods. Stir-fry 1 minute. Add 1/4 C broth. Heat to boiling.
  8. Stir in cornstarch mixture and cook until thickened.
