Spanish Chicken Salad

Description: A California-style salad with chicken, olive oil vinaigrette, and fresh garnishes.

Ingredients:

• 3 1/2 C cooked chicken strips
• 1 small crisp head lettuce, shredded
• 1 large red onion, thinly sliced
• 1/2 C olive oil
• 1/4 C red wine vinegar
• Salt, pepper
• Lettuce leaves
• 2 oranges, peeled and sliced
• 2 avocados, peeled and sliced
• 1 bunch small radishes, trimmed and sliced

Instructions:

1. Combine chicken, shredded lettuce, and onion in bowl.
2. Whisk oil and vinegar, season, and pour over salad. Toss gently.
3. Arrange on lettuce leaves. Garnish with oranges, avocado, and radishes.
