Spinach Cannelloni

Servings: Makes 10 cannelloni

Description: Bundles of chicken and spinach wrapped in green lasagna noodles, perfect for an Italian buffet.

Ingredients:

• 1 C chopped onion
• 1 clove garlic, minced
• 2 T olive oil
• 1/4 t dried basil
• 1/4 t dried oregano
• 2 (1-lb, 12-oz) cans tomatoes, drained and crushed
• Salt, pepper
• 10 spinach lasagna noodles
• 1 lb spinach or 2 packages frozen spinach
• 1 1/4 C butter
• 1 lb boneless chicken breasts, diced
• 1/2 lb grated Parmesan cheese
• 3 to 4 T half and half
• 1/8 t ground nutmeg

Instructions:

1. Make sauce: sauté onion and garlic in oil, add herbs and tomatoes, simmer.
2. Cook noodles. Sauté spinach and chicken separately in butter.
3. Combine with cheese, half and half, nutmeg, salt and pepper.
4. Fill noodles and roll. Bake with sauce at 375°F for 20-30 minutes.
