Vinegared Chicken

Servings: Makes 4 servings

Description: Strong as it is, the vinegar in this dish mellows nicely, letting the chicken retain the integrity of its flavor.

Ingredients:

  • 1 (2 1/2- to 3-lb) chicken, quartered
  • 1/4 C butter or margarine
  • 1 1/2 t salt
  • 1/2 t black pepper
  • 1 (14 1/2-oz) can chicken broth
  • 2/3 C dry red wine
  • 1/2 C tomato puree
  • 1/3 C red wine vinegar
  • 1 T minced shallots or green onion
  • 1 clove garlic, mashed
  • 1 t dried tarragon, crushed
  • 1 t sugar
  • 1/2 bay leaf

Instructions:

  1. Brown chicken in butter in 12-inch skillet. Remove pieces to roasting pan as they brown.
  2. Season with salt and pepper. Drain drippings from skillet.
  3. Add broth, wine, tomato puree, vinegar, shallots, garlic, tarragon, sugar and bay leaf.
  4. Heat to boiling and pour over chicken in roasting pan.
  5. Bake, uncovered, at 350°F until chicken is tender, about 30 minutes.
  6. Remove chicken to serving platter and keep warm.
  7. Skim fat from pan juices. Pour juices into medium saucepan.
  8. Bring to boil and boil until reduced to about 1 1/4 cups. Pour sauce over chicken.
