Walnut Chicken

Servings: Makes 4 servings

Description: Crunchy walnuts with stir-fried chicken and vegetables in a flavorful broth.

Ingredients:

  • 2 C water
  • 1 C walnuts
  • 1/4 t sugar
  • 2 chicken breasts (about 2 lb)
  • 1 egg white
  • 1 T plus 2 t cornstarch
  • 1 t salt
  • 1/8 t white pepper
  • 2 oz Chinese pea pods
  • 2 stalks celery
  • 2 green onions (with tops)
  • 2 T oyster sauce
  • 1 T cold water
  • 1 C oil
  • 1/2 C Chinese Chicken Broth
  • 1 T diced pimiento

Instructions:

  1. Boil walnuts 1 minute, skin, rinse, sprinkle with sugar.
  2. Cube chicken, mix with egg white, 2 t cornstarch, salt, pepper. Refrigerate 20 mins.
  3. Blanch pea pods 30 seconds, drain and cool.
  4. Slice celery and green onions. Mix oyster sauce, remaining cornstarch and water.
  5. Fry walnuts until light brown, drain. Fry chicken until white, drain.
  6. Stir-fry celery in reserved oil, add broth, simmer.
  7. Add chicken, pea pods, green onions, pimiento.
  8. Add sauce mixture and cook until thick. Stir in walnuts.
